The farm
Café Granja La Esperanza is the Herrera family’s farm in Trujillo, Valle del Cauca, rising from 1,430 to 1,760 metres. Here Mandela, Laurina, K7, Java, Colombia and Caturra grow side by side, and the family has built a name for competition-level coffees and processing innovation.
Barrel ageing
Fermentation takes place in barrels, with temperatures logged and timings watched closely throughout. The coffee is then dried slowly on raised beds inside a solar drier, finished in mechanical driers for consistency.
Mandarin co-fermentation
Mandarin joins the coffee during fermentation, lending candied peel and warm citrus that settle beside the soft oak of the barrel.
